Sausage, Pumpkin & Turnip Green Lasagna

Sausage, Pumpkin & Turnip Green Lasagna for the win.I often turn to one dish meals when entertaining- they feed a lot of people and when paired with a simple salad, make a hearty, easy meal. I was scouring my pile of magazines for the perfect fall meal to serve to company last week, and came across this sausage, pumpkin and turnip green lasagna from Southern Living.

Rarely have I made a recipe from Southern Living that wasn’t utterly fantastic, so I figured I’d give it a spin. Instead of your normal tomato sauce base, this one is creamy thanks to milk and parmesan cheese and has the slightest hint of nutmeg. The recipe calls for no-boil lasagna noodles and while I was initially skeptical, they really did soak up all the moisture perfectly. And like most lasagna, it was even better the next day.

A perfect autumn meal and a nice spin on a classic dish.

*Note- make sure when you buy the canned pumpkin you buy 100% pumpkin- not pumpkin pie mix

  1. I can vouch for this dish. It was terrific, sadly I wanted to duplicate it this week for guests but could not find turnip greens at any store in San Diego..will use kale. Mustard greens would have been good I think, but they weren’t to be found either.
