I’m realizing how many of my food posts are sweet potato related and/or Mexican! 🙂 I will make a conscious effort to shift gears over the next few weeks…
UNTIL THEN, here are my thoughts on this week’s Pinterest Recipe of the Week- Chipotle Chicken Sweet Potato Skins.
In one word- delicious. The flavor combo really works here- the sweet potato pairs nicely with the spicy chipotle and the sharp white cheddar. I was going to serve them with a salad, but we really didn’t need it as I served the scooped out sweet potato along with the rest of the meal. (yes- I realize that this doesn’t exactly make them potato skins, but whatever) I also added a can of drained, rinsed cannellini beans, making this a meal packed full of superfoods.
