I was looking for a healthy Crock-Pot meal that could cook all day while we were at work. I assembled these the night before (very easy) and put them in the fridge. In the morning, I transferred them to the Crock-Pot and plugged them in. The Crock-Pot worked its magic, like it always does, and when I came home from work the house smelled amazing and dinner was ready.
The peppers were good! I used ground turkey instead of beef, and served them along side a salad. Healthy and perfectly tasty. 🙂
This recipe has really inspired me to start incorporating more Crock-Pot meals into our routine. There is something so gratifying about coming home and having to do zero cooking. (not to mention the clean-up is easy)
Even better, this recipe made enough for plenty of leftovers.
