Like many of you, I am addicted to Pinterest. I find it an especially great source for new recipes- whenever I get into a cooking funk, I turn to my boards for some inspiration. That being said, I am guilty of pinning things and never making them, so I thought I’d start a new series called “Pinterest Recipe of the Week.” Each week I will pick one recipes and report back on the results.
Summer may be winding down, but I’m not ready to give up the fresh, easy salads that we have been enjoying for the past few months. This cilantro lime chickpea salad was delicious- thanks to the spinach and cilantro it was fresh, healthy, and easy to make. (I tend to lean towards quick and simple recipes during the week since we both work, so this was prefect.) It makes a great side, but could also be a main course if you wanted to add a protein. Also, garbanzo beans hold up well, so it was still good a couple of days later. This will definitely get worked into our regular rotation.
