Pinterest Recipe of the Week- BLT Chopped Salad

If you’re new to this blog, my Pinterest Recipe of the Week series is a way to (you guessed it) test-drive all of the recipes I pin on Pinterest. I was finding that I was great at pinning tons of great looking things, but rarely got around to making them.  It struck me one night over a glass of wine, as so many things do, that I needed to get out of my cooking rut and find some new inspiration. Alas, Pinterest Recipe of the Week was born. Now I try to dedicate one meal per week to a recipe that I’ve pinned. Sometimes it’s a success, sometimes not so much…but thanks to the explosion of food blogs, there are more great recipes than ever online, and as a dedicated “foodie,” I am more than happy to promote them and try out their fun creations. 🙂

This week’s pick was a BLT chopped salad from howsweetitis.com. It was really easy to make, I think start to finish maybe 10 minutes? More importantly, it tasted good. Very good. My husband and I both agreed it would make an appearance in our dinner line-up again. We substituted the feta for blue cheese, but either would be great.

Trying to get the men in your life to eat more salads? Just include a couple of pieces of bacon…the smell of that cooking in your house is enough to get anyone to eat their greens…

BLT Chopped Salad with Corn, Feta + Avocado

Yield: serves 2

Ingredients:

2 cups butter lettuce, chopped
2 cups fresh arugula, chopped
1 pint grape tomatos, quartered
4 slices thick-cut bacon, fried and crumbled
1 cup sweet corn
1 avocado, chopped
4 ounces feta, crumbled (we used blue cheese)

1 1/2 tablespoons olive oil
1 lime, juiced
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:

As a note, to chop my lettuce I like to lay it out on a big cutting board and just continuously run my knife through it (in all different directions) until it’s chopped as much as I like.

In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado. Add in salt, pepper, olive oil and lime juice then toss well to coat. Fold in bacon and feta then divide evenly amount 2 plates. Serve!
