Gazpacho- A Perfect Light Summer Dish

Summer may be wrapping up for many of you, but down here in Florida it is HOT. This is exactly the time of year that I don’t want to be cooking in my kitchen over a hot oven or stove. Enter, gazpacho. Cool, healthy, easy to make if you own a food processor or hand blender, and utterly delicious. This article, courtesy of the New York Times, has several recipes for all different types of gazpacho. If you’ve never made it before, it’s essentially soup made from tomatoes/raw vegetables and is served cold. If you have some great tomatoes on hand, your possibilities are endless- just add some veggies, fresh herbs, crème fraiche, whatever tickles your fancy.
