Easy Chicken Tortilla Soup

Apparently my soup kick is continuing…my husband thinks I’m crazy since it’s warm out and we’re eating hot soup, but sometimes I’m lazy and soup is so easy.

Easy Chicken Tortilla Soup

This chicken tortilla soup has been one of my favorites for years now. Easy is an understatement- you’re essentially throwing everything in a big pot and just letting it get all mixed and mingled and delicious. Make yourself a bowl and grab a beer and enjoy!

Easy Chicken Tortilla Soup

Prep: 10 minutes

Cook: 30 minutes

Serves 6


  • 1 lb boneless chicken breasts, cut into small pieces
  • 3.5 cups of chicken broth
  • 1.2 cup uncooked white rice
  • 1 can (11 oz) corn
  • 1 cup chunky salsa
  • 1 small red or green bell pepper diced
  • 1 bunch fresh cilantro, chopped
  • 1 tsp cumin
  • Zest and juice from 1 lime
  • Tortilla strips (either make your own* or buy tortilla chips)
  • Sliced avocado (optional)


  • Place a large pot over medium heat and spray with cooking spray
  • Add chicken and cook until browned
  • Turn up to high and add broth, rice and cumin. Heat to boil.
  • Once boiling, reduce to low head, cover and cook for 20 mintues
  • Stir in corn, salsa, cilantro, and lime juice. Once served, top with crispy tortilla strips and avocado (if using)

*Homemade crispy tortilla strips

  • Pre-head oven to 425 degrees
  • Cut 4-6 corn tortillas into thin strips
  • Place on a baking sheet and spray all over with cooking spray
  • Bake for 8-10 minutes or until golden brown
